Ingredients
Marinade
- 2lb / 907 g chicken pieces
- 2 tsp ginger-garlic paste
- 2 tsp red chilli powder
- 2 tsp salt
- 1/2 tsp garam masala
- 2 tbsp lime juice
Curry
- 5-6 black peppercorns
- Salt to taste
- 1/2 tsp garam masala
- 1 cup tomato puree
- 2 cups onion
- 1 tsp ginger
- 1 tsp garlic
- 1 inch cinnamon stick
- 2 – 3 cloves
- 6 tbsp mustard oil
- 1 tsp cumin powder
- 1 tsp black pepper
- 1 tsp red chilli powder
- 1 tsp turmeric powder
- 1 tbsp coriander powder
- 2 tbsp kasuri methi (dried fenugreek)
- 3-4 dried red chillies

Recipe

- Marinate chicken with marinade ingredients and set aside

- Add oil to a pan and once hot, add crushed spices and dried red chilies and stir
- Add 1 cup chopped onion and 1 tbsp. garlic, ginger paste

Add 1 cup of chopped tomato and all the remaining spices into it
- Add marinated chicken

Cover the pan with a lid and cook on low heat until the chicken is tender (20-25 minutes)
Finally, add chopped coriander if desired
Serve this delicious looking and tasting curry with white or brown rice and enjoy the delicate flavour and aromas
