Mung beans stir fry

A simple and modern take on a popular vegetarian Indian dish. 

Ingredients

  1. 1/2 cup mung beans
  2. 1/2 onion
  3. A pinch of chilli powder
  4. A pinch of coriander-cumin powder
  5. 1 tsp garlic paste and 1 tsp ginger paste

Recipe

  • Cook the mung beans in a pressure cooker, or alternatively soak for 2-3 hours in warm water and then boil on stove top
  • Then, cook onions on high heat for about 2 minutes – don’t let them get too soft

  • Add chilli and corriander – cumin powder to the onion, followed by the cooked mung beans

Serve with white or brown rice or noodles and enjoy!
