Roast Chicken

Probably the most classic western dish out there, this one is sure to satisfy even the most traditional eaters 

Ingredients

  1. 4 lb / 1800 g whole chicken
  2. 1 tsp minced rosemary
  3. 1 tsp minced thyme
  4. 1 tbsp minced parsley
  5. 1/3 cup olive oil
  6. 3/4 tsp garlic powder
  7. 1 & 1/2 tsp salt
  8. 1 tsp black pepper
  9. 1 large lemon

  • In a small bowl, add all of the above ingredients except the chicken and mix together well

  • Wash the chicken well and place into a roasting pan or baking dish
  • Pat dry with paper towels and pour the mixture over the chicken, covering all of it, including inside the chicken cavity

  • Season the chicken all over with salt and pepper
  • Cover the chicken with aluminium foil and refrigerate overnight

  • When ready to roast, uncover chicken, tie the legs together and roast 1 hour at 425F / 220C.  Let rest 10-15 minutes before serving.
