Falafel Wrap

A great vegetarian wrap and convenient to have on the go

Ingredients

  1. 1/2 cup cooked chickpeas
  2. 1 tbsp mayonnaise
  3. Spring of parsley
  4. 1 tbsp cumin
  5. 1 tsp salt
  6. 1 tbsp coriander seeds
  7. 1 tortilla
  8. 2 cloves garlic
  9. 1/5 cup red onion
  10. 1/4 cup carrot
  11. 1/2 cup salad leaves

  7. 1 whole tortilla
  8. 2 cloves of garlic
  9. 1/5 cup red onion
  10. 1/4 cup carrot
  11. 1/2 cup salad leaves

Recipe

  • Soak dry chickpeas overnight (alternatively use canned chickpeas, which do not need pre-soaking)
  • Grind the dry ingredients first – cumin, salt and coriander seeds in a food processor.  Then add chickpeas and garlic and blend until smooth
  • Place a pan on medium heat and add 2 tablespoons of oil. Once the oil is hot, and add the raw falafel balls and shallow fry until they turn crunchy and brown on both sides.

  • Spread the mayonnaise on the tortilla and place the salad leaves and sliced onions and carrots on it.
  • Carefully roll up the stuffed tortilla and cut in half in the centre if desired

Enjoy this simple Mediterranean meal with a Greek salad and perhaps some ouzo… ?
