Butter Chicken

An Indian favourite, or as some would argue – British.  This butter chicken will delight your tastebuds and tummy at the same time!

Ingredients

  1. 1 can coconut milk
  2. 1 green chilli
  3. 1 tsp salt
  4. 2 tsp garam masala
  5. 4-6 tsp curry powder
  6. 2 tsp tomato paste
  7. 2 tbsp butter
  8. 2 pound chicken breast/drumsticks
  9. 1 medium onion
  10. 1 clove of garlic
  11. 2 tbsp ginger

Recipe

01.

  • In a pan, melt butter.  Add onions, ginger, garlic and chili and fry for 5 minutes.

  • Add the spices, tomato paste and salt, then stir to combine. Cook for 30 seconds, until fragrant.

  • Add the chicken and stir to coat. Cook chicken for a few minutes until brown. Add a bit of water if the pan burns.

04.

  • Add the coconut milk, bring to a boil and cover for 20 minutes.

Serve with white or brown rice and some lassi or chai
