Burrito Bowl

A colourful dish with a lot of variety to provide nutrition and taste all in the one bowl

Ingredients

  1. A squeeze of mayonnaise
  2. 1/2 cup milk/cream
  3. 1/2 an onion
  4. 1 tomato
  5. 1/3 cup red beans
  6. Lemon
  7. Pinch of salt & pepper
  8. 1/2 cup boiled rice
  9. 1/2 capsicum
  10. 2 tbsp soy sauce
  11. Optional chilli-garlic paste

Recipe

01.

  • To make the cream sauce, whisk together sour cream, mayo, garlic, lime juice and salt; set aside.

  • Heat the oil in a broad non-stick pan, add the onions and sauté on a medium flame for 1 to 2 minutes
  • Add red beans and capsicum and sauté on a medium flame for 2 to 3 minutes.  Add chilli if desired.

  • Add rice, refried bean mixture and sour cream to a bowl
  • Add chopped tomato and red onion on top

Garnish with toppings of your choice and enjoy a delicious and crunchy bowl!
