Preheat the oven to 350°F.

Line a 9×5-inch loaf pan with foil, letting the ends extend up the sides; grease the foil.

Cooking

  1. In a small skillet, heat olive oil over medium-high heat.
  2. Add chopped onion and cook until tender (6-8 minutes).
  3. Add garlic, basil, salt, and pepper; cook for an additional minute.
  4. Remove skillet from heat.

Layering

  1. Spread 1/2 cup of pasta sauce into the prepared pan.
  2. Place the thawed pierogi on top and press firmly.
  3. Add the onion mixture over the pierogi.
  4. Mix spinach and beaten egg; spoon this over the onion mixture.
  5. Spread cubed butternut squash evenly over the spinach layer.
  6. Spoon the remaining 1/2 cup of pasta sauce over the top.

Baking and Serving

  1. Sprinkle shredded mozzarella cheese over the top layer.
  2. Bake until bubbly and the cheese is golden brown (55-65 minutes).
  3. Let the casserole stand for 10 minutes before serving.
  4. Cut into slices and serve with sour cream if desired.
