- 1/2 tsp baking powder
- 1 tbsp white vinegar
- 2 tbsp soy sauce
- 1/4 cup soda water (or plain water)

- First thing’s first, cut up the chicken into chunks
- Marinade the it in soy sauce, white vinegar and salt

- Next, mix together flour, corn starch, baking powder, salt and a bit of oil
- Add cold soda water and whisk
- Using tongs, mix the chicken pieces into the mixture

- Place the battered chicken into hot oil, one by one to prevent them sticking together
- Take out onto a drip tray

To make the sauce
- Add honey to the stove and a tiny bit of soy sauce, white vinegar and salt
- Don’t over-cook it like I have! Keep it light
- Mix in the chicken and toss
Serve with white or brown rice or noodles and enjoy with chopsticks!
