Ingredients
- 1 & 1/2 lb / 680 g pork
 - 1 onion
 - 2 tomatoes
 - 3 cloves garlic
 - 1/4 cup oil
 - 1 bell pepper (capsicum)
 - 3 tbsp ketchup
 - 1/4 cup rice wine vinegar
 - 1-2 tbsp soy sauce
 - 1/4 cup rice flour
 - 1/3 cup brown sugar

Recipe

- Place the pork in a medium bowl
 - Season all over with salt and sprinkle the rice flour over the top
 - Lightly mix and set aside

- Combine soy sauce, rice wine vinegar, ketchup and brown sugar in a medium bowl and whisk to combine
 - Set aside the sauce

- Add 1 tbsp. of oil in a large skillet on medium heat. Once hot, add bell pepper, onion, tomatoes and garlic
 - Cook the vegetables about 1 minute then transfer vegetables to a large plate

- Return the skillet to medium heat add remaining oil
 - Once hot, add pork and cook until brown (about 90 sec. per side)

- Pour the sweet and sour sauce in to the skillet with the pork
 - Increase heat and cook, until sweet and sour sauce thickens, about2-3 minutes
 - Add vegetables back in to pot combine and cook them
 
															Serve hot, over white rice. Garnish with thinly sliced green onions as desired
