Ingredients
- 4 lb / 1800 g whole chicken
 - 1 tsp minced rosemary
 - 1 tsp minced thyme
 - 1 tbsp minced parsley
 - 1/3 cup olive oil
 - 3/4 tsp garlic powder
 - 1 & 1/2 tsp salt
 - 1 tsp black pepper

- In a small bowl, add all of the above ingredients except the chicken and mix together well

- Wash the chicken well and place into a roasting pan or baking dish
 - Pat dry with paper towels and pour the mixture over the chicken, covering all of it, including inside the chicken cavity

- Season the chicken all over with salt and pepper
 - Cover the chicken with aluminium foil and refrigerate overnight

When ready to roast, uncover chicken, tie the legs together and roast 1 hour at 425F / 220C. Let rest 10-15 minutes before serving.
