Chicken Curry

Delicious and full of spices, this one will be a meal to remember

Ingredients

Marinade

  1. 2lb / 907 g chicken pieces
  2. 2 tsp ginger-garlic paste
  3. 2 tsp red chilli powder
  4. 2 tsp salt
  5. 1/2 tsp garam masala
  6. 2 tbsp lime juice

Curry

  1. 5-6 black peppercorns
  2. Salt to taste
  3. 1/2 tsp garam masala
  4. 1 cup tomato puree
  5. 2 cups onion
  6. 1 tsp ginger
  7. 1 tsp garlic
  8. 1 inch cinnamon stick
  9. 2 – 3 cloves
  10. 6 tbsp mustard oil
  11. 1 tsp cumin powder
  12. 1 tsp black pepper
  13. 1 tsp red chilli powder
  14. 1 tsp turmeric powder
  15. 1 tbsp coriander powder
  16. 2 tbsp kasuri methi (dried fenugreek)
  17. 3-4 dried red chillies

  2. Salt (to taste)
  3. 1/2 tsp garam masala
  4. 1 cup tomato puree
  5. 2 cups onion
  6. 1 tsp ginger
  7. 1 tsp garlic
  8. 1 inch cinnamon stick
  9. 2-3 cloves
  10. 6 tbsp mustard oil
  11. 1 tsp cumin powder
  12. 1 tsp black pepper
  13. 1 tsp red chilli powder
  14. 1 tsp turmeric powder
  15. 1 tbsp coriander powder
  16. 2 tbsp kasuri methi (dried fenugreek)
  17. 3-4 dried red chillies

Recipe

01.

  • Marinate chicken with marinade ingredients and set aside

  • Add oil to a pan and once hot, add crushed spices and dried red chilies and stir
  • Add 1 cup chopped onion and 1 tbsp. garlic, ginger paste

  • Add 1 cup of chopped tomato and all the remaining spices into it

  • Add marinated chicken

  • Cover the pan with a lid and cook on low heat until the chicken is tender (20-25 minutes)

  • Finally, add chopped coriander if desired

Serve this delicious looking and tasting curry with white or brown rice and enjoy the delicate flavour and aromas
