Ingredients
- 1/2 cup cooked chickpeas
 - 1 tbsp mayonnaise
 - Spring of parsley
 - 1 tbsp cumin
 - 1 tsp salt
 - 1 tbsp coriander seeds
 - 1 tortilla
 - 2 cloves garlic
 - 1/5 cup red onion
 - 1/4 cup carrot
 - 1/2 cup salad leaves

- Soak dry chickpeas overnight (alternatively use canned chickpeas, which do not need pre-soaking)
 - Grind the dry ingredients first – cumin, salt and coriander seeds in a food processor. Then add chickpeas and garlic and blend until smooth
 - Place a pan on medium heat and add 2 tablespoons of oil. Once the oil is hot, and add the raw falafel balls and shallow fry until they turn crunchy and brown on both sides.

- Spread the mayonnaise on the tortilla and place the salad leaves and sliced onions and carrots on it.
 - Carefully roll up the stuffed tortilla and cut in half in the centre if desired
