Ingredients
- 2 cups mixed veggies (e.g shredded cauliflower, carrot)
 - 2 cups mango
 - 3 cups steamed rice, or soba noodles
 - 1 tsp sesame seeds
 - 3/4 pound tuna & salmon (or beans for a vegetarian alternative)
 - 1/2 cup scallions (spring onions)
 - 1 cup seaweed
 - 1 cup wasabi sauce
 - 1&1/2 cup avocado
 - 3/4 cup cucumber with chilli flakes & white vinegar

Recipe

- For the base of poke bowl, use steamed rice seasoned with rice vinegar, sesame oil and salt
 - You may also use soba noodles and quinoa for the base of poke bowl

- Marinate scallions (green onions) with soy sauce, rice vinegar, sesame oil and rest for 20 minutes

- For protein, add some meat such as tuna and salmon, or beans for a vegetarian alternative
 - Marinate tuna and salmon in soy sauce, rice vinegar, sesame oil and green onion
 - Alternatively, use beans steamed and cooked in oil, salt and garlic

- For the topping of poke bowl add different types of veggies and fruits. We used cucumber salad sprinkled with red chili flakes and white vinegar, together with mango for a bit of zest

Use a creamy wasabi citrus poke bowl sauce to tie it all together.
To prepare, mix mayonnaise, lemon juice, wasabi paste and sugar, or use pre-bought sauce of your liking

To assemble the poke bowl, spread the base of rice or noodles on the bottom, and then add the other ingredients in a circle
Garnish with black sesame seeds
