- 1/2 cup milk
 - 1 tbsp butter or ghee
 - 1 tsp garlic
 - 1 whole potato
 - 2 eggs
 - 1/2 cup grated cheese such as cheddar or parmesan
 - Herbs (optional) such as chives, thyme, parsley, basil

- Fry diced (raw) potato with onion and garlic, until soft and caramelised

- Whisk eggs and add grated cheese
 - Add cooked potato and onion to whisked eggs and stir, before pouring the whole mixture on a saucepan

- Carefully slide the omelette off onto a plate and flip it back on to the pan to cook the underside. Cook other side down on low heat
 - Sprinkle herbs on top if desired
 - Remove from heat and serve once lightly browned
