Spanish omelette

A quick and simple dish for lunch or dinner, perfect to serve with a side of salad or greens

Ingredients

  1. 1/2 cup milk
  2. 1 tbsp butter or ghee
  3. 1 tsp garlic
  4. 1 whole potato
  5. 2 eggs
  6. 1/2 cup grated cheese such as cheddar or parmesan
  7. Herbs (optional) such as chives, thyme, parsley, basil

Ingredients

  1. 1/2 cup milk
  2. 1 tbsp butter or ghee

  4. 1 whole potato
  5. 2 eggs
  6. 1/2 cup grated cheese such as cheddar or parmesan

Recipe

  • Fry diced (raw) potato with onion and garlic, until soft and caramelised

  • Whisk eggs and add grated cheese
  • Add cooked potato and onion to whisked eggs and stir, before pouring the whole mixture on a saucepan

  • Carefully slide the omelette off onto a plate and flip it back on to the pan to cook the underside.  Cook other side down on low heat
  • Sprinkle herbs on top if desired
  • Remove from heat and serve once lightly browned

Enjoy this light and refreshing meal with a side salad or veggies
